Last night’s snack: fruit, I think. Busy planning my luncheon for International Women’s Day so can’t recall.
7am-Lemon juice & water
8 am – PP smoothie with raspberries I froze
Spent the morning making food for my luncheon so I nibbled on stuff I was making
12:30 pm-International luncheon started with Sangria (Spain) and hors d’oeuvres:mini-quesadillas (Mexico) and spanikopita (Greece) from Trader Joe’s. Lunch itself featured a minced salad with feta cheese topping (Israel), couscous (Africa), samosas (India), hoomus with pita chips (Middle East) and mushroom/ barley soup (Eastern Europe). Dessert was Brie (France) with crackers, cookies and chocolate halvah balls (Middle East).
(My Israeli neighbor made the minced salad and samosas; I made the soup, couscous, hoomus, quesadillas and halvah balls. Also had coffee & tea.)
I ate salad, quesadillas and halvah, since the other items were made from wheat, which I am avoiding.
6 p.m. – Stir fried snow peas with tofu, ginger and scallions. This was going to be the Asian part of lunch, but there was enough food without it. Instead of salad, I rolled up arugula & sprouts in a nori sheet. I also ate 2 pieces of GF toast with Omega 3 oil and herbal tea.

P.S. Today was also Mardi Gras.
