Last night’s snack: organic blueberries & applesauce

6 a.m. Volunteering @ MANNA Kitchen, so made steel cut oats and GF toast
Mid-Morning: At MANNA I had 1/2 cup of Starbucks hot choc. & a small bag of corn natural chips .
Noon: Had a small arugula salad with goat cheese & a slice of Gouda. Then had to run  an errand to the dentist for my mother-in-law, so my lunch was interrupted. While waiting at the dentist I had a chai latter made from the loose tea (not the mix, which is sugar-laden) with foaming soymilk to hold me over til I got home to eat. Also had one piece of chocolate covered ginger when I stopped to pick up the package for the dentist at my mother-in-laws.
2 p.m. Made a green smoothie with blueberries, kiwi & mango. Very flavorful. Not too sweet.
Also, I made cauliflower soup last night from a recipe from Lunch in Paris and made it with too much soup stock, so it came out too thin.  On my way back from MANNA I picked up some pre-cut and peeled squash, cooked it, then pureed it with the cauliflower soup, added curry powder and voila! i now have an Indian flavored soup
for my International Women’s Day luncheon next week.

6 p.m. Baby artichokes simmered in water. Eaten with olive oil dipping. 2 corn quesadillas with sprouts. Brown rice & black beans.
