Note: The menus come from my experimenting with Atkins for Vegetarians, so my meals reflect their guidelines
7:30 am– Tempeh strips (supposed to be like bacon); mashed cauliflower with shredded cheddar cheese; chai tea with a dash of cream
Mid-morning Snack– Made a green smoothie with allowed blueberries & mixed garden
greens; pecans that I soaked earlier. (Soaking them makes them more digestible.)
12:30 pm– (Made earlier today): 2 hard-boiled eggs: one deviled, one plain; mixed green salad with radishes & black olives.
Mid-aft snack– One stick of cheese (Saving 2nd one for later; more of my green smoothie
6 pm – The menu called for a Quorn roast (a brand of veg. roast, but it has gluten, so I substituted the rest of the shiritaki noodles from last night); salad, green beans & artichoke hearts hearts.
Snack: Second stick of cheese (The Atkins menu called for two for aft. snack, but I ate only one.) Also may have some almond milk, instead of the lo carb shake that I did not have earlier.
