Snack from Last Night- 1/2 apple with tahini and a few nuts; also a few potato chips (my weakness) from my husband’s card game snacks
6 a.m. –Lemon juice & water followed by the other half of the apple
6:30 a.m. – Cooked buckwheat cereal with Almond “Milk”
10 a.m. – 1/2 cup hot chocolate while volunteering in the MANNA kitchen
1 p.m. – My cousin treated me to lunch at the Tavern Restaurant. I had
a Greek salad without anchovies and a side of steamed mixed veggies, plusÂ a pickle sliver and 2 or 3 potato chips. At home, I ate a few nuts.
Came home from lunch and also volunteering in the kitchen and crashed with a 2 1/2 hr. nap. I love to nap and just finished a book called Take a Nap! Change Your Life, which demonstrates that napping is good for you.
6:30 p.m. Decided to use up the Great Northern beans and made a similar dish as last night, only I used red cabbage and carrots instead of peppers to accompany the collards, garlic and leeks. Also, I made a salad from spinach, cherry tomatoes, red bell pepper and radishes to honor Go Red Day, a promotion of the American Heart Association to raise awareness of women and heart disease.
