Tart Start Fruit Salad & Chopped (Holiday) Tossed Salad

These two red/pink, white, & green salads are my last holiday salads for 2011, I promise! Both of these can be made in advance, so if you want to serve them if you have company over the New Year’s week-end, they can be made in the morning and served in the evening, so long as the green salad is dressed right before serving. Happy New Year!

Tart Start Fruit Salad

Utensils: Cutting board & knife, serving bowl
Prep. Time: 15 minutes (10 if you buy pom seeds [arils] already removed from the fruit)
Cooking Time: None!

Ingredients

1/2 pink or white grapefruit, peeled and cut into bite-sized pieces
1 organic green  and add to bowl.
kiwi, peeled and diced
1/2 fresh pomegranate, peeled, with arils (seeds) removed
1/8 cup cashews, chopped
grapefruit or pom juice, if needed
Dried coconut for topping (optional)

Directions

1. Peel and chop the grapefruit. Place is a attractive bowl.
2. Cut pomegranate in half and then in half again; place in water in a deep bowl and peel away the membrane, which will float to the top. Remove membrane and drain water off so only seeds remain. Add to bowl.
3. Peel and dice the green kiwi and add to bowl.
4. Add chopped cashews (or other nit of choice). Add to bowl.
5. Toss, adding a little juice if the grapefruit isn’t juicy enough to moisten the rest of the fruit.
5. Sprinkle with unsweetened, dried coconut.

Yield: Serves 2 or 3, but you can use the whole grapefruit & whole pomegranate, and two kiwis for a double recipe for company.

 

Chopped Holiday Tossed Salad

Utensils: Cutting Board & Knife, serving bowl
Prep. Time: 10-15 minutes
Cooking Time: None!

Ingredients

2 c. Red-tipped Romaine or leaf lettuce, chopped
2-3 red radishes, chopped
5-6 slices of leek (white part) minced
4-5 slices daikon radish, chopped (optional)
3/4-1 c. snow peas or snap peas, tips trimmed and chopped
1/4-1/2 c. bean sprouts, chopped
1-2 org. cauliflower florettes, grated
dressing of your choice or olive oil & lemon juice

Directions

Place all the chopped ingredients in a bowl and toss gently with olive oil and lemon juice or your favorite dressing. If not serving immediately, cover and chill and toss with dressing right before serving. Serves 3-4 people as a side salad.
