Cinco de Mayo Luncheon

Yesterday I made a buffet lunch at the Narberth (Senior) Center, using the buffet I posted on my website a couple of years ago. Here is the link to that buffet recipe: https://www.menupause.info/archives/1141.
However, the photo below is from yesterday’s buffet minus the pasta (photo below), which I added after I put the dish together.

 

I also served a chilled pasta with salsa. I made both a gluten free rice pasta and a regular pasta. I now look for organic flours because I think that organic pasta is healthier. This photo uses the rice penne pasta.
