Delicata Squash & Red Bell Peppers: A Colorful Combo

Delicata squash is one of my favorite fall veggies because cooking time is much shorter than winter squashes and the taste is very flavorful. It is also called sweet potato squash, maybe because the flesh has a similar texture to cooked sweet potatoes. The skin can be eaten; just be sure to cook the squash long enough to be able to pierce the squash with a fork.

Utensils: Two pans, or one pan and one pot, cutting board & knife, serving platter
Prep. Time: 15 minutes
Cooking Time: 15  minutes
Ingredients (Organic whenever possible)
One delicata squash, cut lengthwise and seeds scooped out
One red bell pepper, cut and sliced into lengthwise slivers (seeds removed)
One-two garlic cloves, peeled & minced
One cup sliced (shiitake) mushrooms
Salt & pepper to taste
1/2 tsp. sliced fresh cayenne pepper 
Herbs of your choice: oregano, thyme, basil (minced)
olive oil
parsley for garnish, optional
1. Wash all veggies. 
2. Place slivered peppers, sliced mushrooms, cayenne pepper, and minced garlic in a small pan with olive oil and sauté until peppers are soft. (Add some water or broth to keep from burning.)
3. Take each half of the squash and cut 1/2″ crescents. Place squash crescents and cook in a small amount of water or broth in large fry pan. (If you steam them, use a pot and steamer rack; start the water under the steamer before cutting the veggies.)
4. When the peppers are tender (5-8 min.), shut off heat and place veggies in a  bowl. When the squash is tender (5-10 min.), remove with a slotted spoon and add to bowl.  
5. Toss with salt, pepper, herbs, and a little more olive oil, if the dish appears too dry.
6. Place on a platter and garnish with parsley. Can also be served chilled. Serves 4 to 6.
Note: To make this a one dish meal, add cooked  beans, tofu, tempeh, or sliced chicken to the vegetables in the fry pan. If you use cheese, add grated cheese after the dish has been cooked and allow the heat of the food to melt the cheese.
