In the Products Information Corner I am featuring one of the 10 Super Foods featured under This ‘n That. It is peeled squash for ready cutting, cooking, and eating. The picture below is from the Internet, because I haven’t yet purchased my squash for Thanksgiving, but I like the idea that it is ready-to-cook. I have also seen it peeled and cut into chunks, and since raw squash is sometimes difficult to cut, this is a big help when time is a factor.

Probably the most outstanding feature of winter squashes is that this food is packed with Vitamin A, which is an important nutrient for our eyes. It is also a good source of fiber. You can use it in soups, stews, pies, and just steamed and eaten with a little oil or butter and cinnamon. I may feature a squash recipe in next month’s recipe section, using the precut version.
