Peak to Pique: Roasted Red Peppers

February foods will naturally be linked with the color red, so roasted red peppers will be part of the recipes. The photo below is actually a dish my cousin Phyllis brought to dinner recently. Her recipe for roasted red peppers with garlic is easy because it does not require burning the skins and peeling them. Be sure to catch the February posting to find out just how easy this recipe is.
