Patriotic Parfait

I made this over the Fourth of July and decided to call it Patriotic Parfait, since I used the colors red, white, and blue.

Utensils: parfait glasses or tall glasses
Prep. Time: 5 minutes if Cashew Creme* is made. (*See below.)
Cooking time: None!
Category: Vegan, if you use Cashew Creme or Soy Yogurt


organic blueberries
organic strawberries and/or raspberries
cashew creme (Can sub. (soy) yogurt or sour cream)

1. Wash all berries and drain.
2. Spoon about one tablespoon cashew creme in the bottom of the parfait or tall glass. Add some red or blue berries.
3. Do this two or three times, alternating the colors of the berries.
4. Top with berries and if you wish, unsweetened, dried coconut.

Option: Feel free to add maple, brown rice, agave syrup, or Stevia to the berries if they are too tart. Can also mix the red and blueberries together and each fruit layer will have both colors, with the white in between.


*Cashew Creme

I featured cashew creme in an earlier posting, so I am reposting the recipe below for your convenience:

1 c. raw cashews soaked in filtered water
approximately 1/2 c. of filtered water (additional)

Soak cashews for a few hours in pure water. Drain. Place in blender and add about 1/4 c. fresh water and buzz until smooth, adding more water, a little at a time, to obtain consistency you need. For the parfait, the consistency should be thick. Also, you may add vanilla extract or a glob of honey or maple syrup or brown rice syrup or agave to sweeten.
Place in ‘frig and use within 3 or 4 days.

Note: I am experimenting with roasted cashews (unsalted) and unroasted (again) to get a better handle on the amount of water needed.
