P.I.C.: Gluten-Free Ginger Snaps

Ginger Snaps have got to be my favorite cookie, and now that Mary’s Gone Crackers has made a great Ginger Snap, I really have to curb my Cookie monster habits. I have already profiled Mary’s Gone Crackers, which have become my favorite cracker, gluten-free or otherwise, but the cookies are really  terrific. Here is what is listed on one side of the box:

“organic  kosher   Non-GMO wheat free-gluten free  vegan-dairy-free  allergy friendly  low glycemic sweeteners contains chia seeds no hydrogenated oils no trans-fats delicious & satisfying  infused with love”

I know you will find it hard to believe that a cookie could taste this good without all the “stuff”most cookies have that are unhealthy, but this cookie really lives up to its name—gingery and snappy!

I have not yet tried the other flavors: chocolate chip, “N’ oatmeal with raisins and no oats, double chocolate chip and peanut butter.
(While oats are not actually glutenous, they are often grown and harvested with gluten grains, so many GF people avoid oats.)

Underneath the list is this trademarked notation: “Traditional flavors, revolutionary ingredients”

As I write this, I am tempted to munch on some of these cookies, but luckily I am still full from dinner, so I will abstain and save them for my snack!
