Note: I felt a tickle in my throat all afternoon, so when I got back from subbing, I had a bowl of soup and climbed into bed, sleeping from 5 – 8 p.m. Got up, had some fruit about 8 p.m. and then tea & GF toast around 8:30 pm. When back to sleep until about 4 am., read awhile then had 1/4 fresh pineapple (very hungry); back in bed for about 1/2 hr. No sleep needed, so started my day very early.
6:30 am – Made myself GF pancakes with Dandy blend.I had about 6 pancakes, because I was still hungry.
9 am – Organic apple
Lunch (noon?) – I made my stir-fried snow peas with tofu, but this time measured the ingredients so I could post it on www.menupause.info for St. Patrick’s Day.
Mid-day – Bought my GF bread and also some muffins and banana bread to try. Had 2 slices of banana bread. Cannot tell it is gluten and dairy free. Deborah Lamprey, who owns the bakery, is amazing!
6 p.m. – Made 2 tortillas filled with avocado, grated carrots, shredded lettuce, minced scallions, black beans and sunflower greens that I grow indoors. Also made baby artichokes and had a side of olives.
Snack may be a slice of GF bread with tea and/or apiece of fruit.
