A couple weeks ago I started buying organic Broccoli Slaw @ Trader Joe’s and found it worked in stir fries as well as salad. You can make it as simple as the slaw with onions or add all the veggies you like. I also added tempeh so it became a complete meal, but you can just use it as a side dish, also.
Utensils: Cutting board & knife, large pan or wok for stir fries
Prep Time & Cooking Time: about 20 minutes (I prepare the veggies and add them to the pan as they cook.)

about 2 cups organic broccoli slaw
2-3 scallions or one leek, sliced thinly
one garlic clove, minced
1/2 cup sliced mushrooms
1/2 red bell pepper, sliced or one sliced red radish
1/2 cup sliced zucchini or yellow summer squash
Soup stock or veggies broth
Low sodium soy sauce
1. Place about 1/2 inch of veggie broth in a wide, shallow saucepan. Simmer, adding scallions or leek.
2. While the slaw is simmering, add optional veggies and cook only 3-4 minutes, adding garlic at the end.
3. By this time the water or broth should almost be evaporated. Shut off stove and add natural soy sauce & oil to taste. (If you are adding the optional veggies, you might need as much as one Tbl. of olive oil.)
* Tempeh– Before starting the veggies, I put triangles of tempeh tossed in olive oil into my Foreman grill and grilled it for about 5 minutes, adding it to my dish at the very end.
