Fresh vs Frozen

The Season for Soup

Every winter I start making soup a regular part of my menu, Sometimes, it IS the menu, coupled with a salad and some crunchy crackers spread with nut butter.

For the next blog, I plan to feature some easy soups to prepare, plus perhaps a chili, which is a cross between a soup and a stew. My favorite recipe is from vegetarian Steve Kochersperger, who won a recipe contest in State College with this dish. I will ask his permission to reprint it.

Last week I did prepare one of my favorite soups: Cauliflower/Sweet Potato Soup. Unfortunately, I did not take a picture, and if I make it again this week, I will photograph it and add it to this part of my blog. There are only THREE ingredients (plus water): baked sweet potato, cooked cauliflower, and curry powder blended to a smooth consistency. Easy and tasty.

Soups can easily be made without meat. And if you don’t want to make stock, there are several natural food companies that make both meat-based and meatless stocks. So, no excuses for not making soup part of your cold weather menus. Watch for soup recipes in my next blog.
