This is actually a picture from one of the the Auto Grill’s where we ate when on our trip to Italy. The “recipe” is not even a recipe, just a few ingredients with olive oil, but it is simply delicious!

Organic, ripe tomatoes
Organic lettuce, optional
Mozzarella Cheese: Organic if Possible
Organic Olive Oil
1. If you use small mozzarella balls, place them in a bowl and toss with olive oil. (Sometimes you can purchase them already in the oil.)
2. Slice the tomatoes into wedges and add to the bowl. Add lettuce if you wish. (Most of the salads I ate had no lettuce, but the Auto Grill did use it.)
3. Toss with a bit more olive oil and basil. Add olives, if using. Serve chilled in a bowl or flat plate.
Note: At one restaurant, the salad was served on a rectangular plate with large tomatoes sliced alternately with slices of large mozzarella cheese and the olive oil and basil sprinkled on top. So the dish was very colorful: red, white, red, white with green basil garnish. No lettuce needed!
