Cooked vs Raw Foods

In Love Your Body by Viktoras Kulvinskas, the author makes a strong statement for food in its natural, uncooked stage as recommended by Dr. Howell in his book Enzyme Nutrition (Click on the feature article in Kitchen Nutrition with Recipes). Here’s what Viktor has to say:
Nature’s foods are in their most nutritious state when eaten raw, picked ripe from orchard or garden. Cooking destroys all enzymes, lecithin, many vitamins and much of the protein. As much as 85% of the original nutrients may be lost in cooking. (p. 6)
