Chilled Mango Soup
Once, on vacation, I sipped a delicious soup made with mangoes. Not sure I captured the exact flavor here, but close enough to enjoy! This week is another heat wave, so this mango soup is refreshing! Feel free to use any other soft fruit besides peaches. I was able to find both organic peaches and organic mangoes. If you have to choose which one to buy organic, choose peaches, since the Environmental Working Group (www.ewg.org) puts peaches at the top of the list of fruits that are heavily sprayed with pesticides.
Utensils: Cutting board a& knife, blender, bowl
Prep. Time: 10 minutes
Cooking Time: None!
Ingredients
one large organic peach, sliced and pitted
one (organic) mango, peeled & pitted
one cup liquid (juice, water, coconut water, rice dream, etc.)
dash of vanilla extract
1 tsp. honey (optional)
berries to garnish
Directions
Place everything in the blender and blend until smooth. If your feel the soup is too thin, add another peach.
Variations
Substitute 1/2 banana for honey. Use pineapple with the peach and mango. Add juice of 1/2 lemon or lime for a tart soup. Garnish with slivered almonds instead of, or in addition to, fruit. Sprinkle with unsweetened dried coconut. The variations are endless!
