Food Combined Fruit Dishes (Two on YouTube)

I did a series on Food Combining last year in my food category Nobody Eats Like Me. (Type in Food Combining in the Search Box and you should have several articles to read. ) In this fruit salad I combined sweet fruit (banana) with sub-acid fruits (apples, pears, blueberries) plus apple juice (sub-acid) for an acceptable combination to make digestion easier.  Serve this alone for breakfast or 20 minutes before eating a main meal. Avoid eating after a main meal, because the fruit won’t digest properly and may cause digestion issues.

Broiled Grapefruit


Both Chinese & Ayurvedic (Ancient Indian) medicine suggests eating warm foods in winter. Grapefruit wasn’t the best choice, since it is tropical, but broiling it this way is a winter treat for me. This is an example of two acid fruits used together, cranberries & grapefruit….good combo.

Utensils: Cutting board & knife; grapefruit knife, oven-proof dish
Prep. Time: 5 minutes
Cooking Time: 3-5 minutes
Categories: Vegan, Gluten-free

Ingredients

one grapefruit
cranberries
honey (optional)

Directions

1. Wash & cut grapefruit in half crosswise. Use a grapefruit knife or small sharp knife to cut around the inside rim & also the sections to loosen each segment.
2. Insert a cranberry in the center. Pour about 1/2 tsp. honey over the top, if you wish.
3. Place in broiler 3-5 minutes,; remove and cool before eating. Do not refrigerate.

 

Mixed Fruit Salad
This is an example of combining sweet fruits and sub-acid fruit, an acceptable combination. (Adding orange juice instead of apple juice would put this in the not so good category.)

Utensils: Cutting board & knife, strainer, mixing bowl and serving bowl, (pastry scraper is optional)
Prep. Time: 30 minutes
Cooking Time: None!
Category: Vegan, Sugar & Salt Free, Gluten-Free

Ingredients

3 or 4 organic apples, washed, cut in half,  cored & diced
3 or 4 organic pears, washed, cut in half, cored & diced
2 ripe, organic bananas, peeled and sliced
one pkg. frozen, organic blueberries, rinsed and drained
1/2-1 cup apple juice “spiked” with cinnamon, nutmeg, & ginger powder

Directions

1. Prepare fruit and mix gently in a large bowl. (I used my new pastry scraper to scoop up the diced fruit from the cutting board and transfer the pieces to my mixing bowl.
2. Add spices to apple juice (start with 1/2 cup juice) and whisk. (I used about 1/2 tsp. of each spice.) Pour over fruit to moisten. (If you use 3 apples and 3 pears, only 1/2 cup is needed)
3. Mix again gently. Transfer to large serving bowl, or individual bowls like the one pictures above.

Note: The cinnamon & nutmeg made my salad look like it was beginning to oxidize, so next time I would put these in shakers next to the fruit salad.  Also, instead of serving this right from the ‘frig, let it come to room temperature so the fruit is not cold on your stomach.

P.S. I made this for our Hannukah party at Shireinu, our small congregation. Alan made lacey potato latkes, using the recipe I posted last year. Here is the link to the recipe:http://www.menupause.info/archives/8030. While you may not celebrate Hannukah, you don’t have to be Jewish to enjoy the latkes. They are non-denominational and wickedly delicious as a once-a-year treat, since they are deep-fried.


Stewed Fruit
(Also sweet and sub-acid combo)

Utensils: Cutting board & knife, small pot
Prep. Time: 5 minutes
Cooking Time: 5-7 minutes
Categories: Vegan, Gluten-Free

Ingredients

one or two organic, ripe pears (sub-acid) or other sub-acid fruit
1/2-one cup organic raisins (sweet) or other un-sulfured, organic, dried fruit
1/2 cup organic apple or pear juice (sub-acid)
cinnamon, optional

Directions
1. Wash, peel, core and dice pears and place in a small pot. Add raisins and juice.
2. Simmer for about 5 minutes or until fruit is warm through and raisins are plump.
3. Serve warm with cinnamon if you wish.

Variation: Top with warm applesauce. (I put a heat-proof dish on a screen over the pot with the fruit cooking. See photo below.)

Note: I happened to have a very ripe pear I wanted to use. Feel free to add other sub-acid fruits, such as apples
and other dried fruits such as dates, apricots, etc. You could also combine apples and pears with an acid fruit, such as cranberries…just not all three categories in one dish for better digestion.
